RECIPE: CANTALOUPE AND BASIL SALAD

My local supermarket has samples of gourmet items almost every weekend, and this had to be one of my favorites.

Easy and simple ingredients that can be found at any grocery store.



Ingredients

Medium Cantaloupe
tsp. Chili Powder (or more to taste)
 4 TB Honey
TB Chopped Fresh Basil Leaves
 tsp. Lime Zest
 Slivered Almonds (optional)

Instructions

Cut Melon in half, lengthwise, and remove and discard seeds.  Cut lengthwise again so it is quartered.
Remove rind from under wedges, and place fruit  on a plate, curved side up.
Sprinkle with chili powder, and toss chopped basil pieces on  each wedge.

Drizzle artistically with honey.

Cut wedges into cubes, and add to a bowl.  Sprinkle on lime zest, and toss lightly.  Make sure to add the juices from the plated wedges to your bowl, also.

Add almond slivers if desired.

Enjoy this summer treat!  Makes about 4 servings.
